How to Make Homemade Chestnut Granola

We built this off our regular oat granola base and reworked it around the chips. Makes about 5 cups — enough for a week of breakfasts, or one very good gift.

Ingredients

Bake in:

  • 2 cups rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup pecans, chopped
  • 1/2 cup whole almonds
  • 2 tablespoons chia seeds
  • 2 tablespoons hemp seeds
  • 2 tablespoons ground flaxseed
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 2 tablespoons organic sunflower oil
  • 1/4 cup 100% maple syrup
  • 1 teaspoon vanilla extract

Stir in after cooling:

  • 1 cup Treeborn Oven Roasted Chestnut Chips, roughly chopped
  • 1/2 cup raisins
  • 1/2 cup dried cranberries (optional)

Instructions

  1. Preheat the oven to 250°F and line a rimmed baking sheet with parchment.
  2. Combine the dry bake-in ingredients in a large bowl.
  3. Whisk the sunflower oil into the maple syrup in a small saucepan, bring to a simmer, then remove from heat and stir in the vanilla.
  4. Pour over the oat mixture and mix until everything’s coated.
  5. Spread in a single layer and bake 90 minutes, stirring every 15, until golden.
  6. Cool completely, then stir in the chestnut chips, raisins, and cranberries — adding them after baking is what keeps every bite crunchy instead of soft.
