How to Cook with Chestnuts: Kentucky Braised Chicken with Cider

Sometimes creating a new recipe with fresh chestnuts starts with a gift. When our friend and customer Joe traveled from New York to Kentucky to pick up chestnut seedlings, he brought fresh apples and cider—a perfect invitation to celebrate fall’s bounty. We invited him to dinner, and after he left, I wondered: What chestnut dish could I make as a remembrance of his gift during chestnut harvest?

The result was this delicious Kentucky Braised Chicken with Chestnuts & Cider—a dish that captures the heart of fall in every bite.

🥄 Preparing Fresh Chestnuts for Cooking

Chestnuts are the heart of this recipe, bringing sweetness and texture. Start by scoring the shells, cook until they crack, and steaming them under a towel to loosen the skins. I boiled the chestnuts for 25 minutes.

🍎 Building a Fall Braise

In a heavy pot, brown chicken in butter and olive oil until golden. Add shallots, garlic, thyme, cider, mustard, and roasted chestnuts. Simmer gently until tender and aromatic.

The chestnuts melt into the sauce, blending their subtle sweetness with the savory richness of cider and herbs. It’s comfort food with a chestnut twist—Kentucky-style.

Kentucky Braised Chicken with Chestnuts & Cider

Serves: 2–4 | Prep: 20 min | Cook: 40 min

Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 1 cup fresh boiled chestnuts for 25 minutes (peel)
  • 1 cup apple cider
  • 1 cup chicken stock
  • 1 shallot, sliced
  • 2 cloves garlic, minced
  • 2 Tbsp butter + 2 Tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1 tsp fresh thyme
  • Salt & pepper, to taste

Instructions

  1. Brown chicken; remove and set aside.
  2. Sauté shallot and garlic until fragrant.
  3. Deglaze with cider and vinegar; stir in mustard.
  4. Return chicken; add chestnuts, thyme, and stock.
  5. Cover and simmer 40 minutes in oven at about 375 until tender.
  6. I served with mashed potatoes, spinach and fresh bread.
